Friday recipe: soy protein chili

As temperatures here in Des Moines dip, I think it is time to bust out the dutch oven and cook up some hearty (and healthy) soups.

I received this recipe the other week from the fabulous crew in the Wellness Center and even got to sample it while there. It is perfect for those cold winter days that lay ahead of us.

Soy protein chiliSoy protein chili

  • 1 onion, chopped
  • 1-2 tbsp olive oil
  • 1/2-1 cup textured soy protein
  • 1 medium red pepper
  • 1 tbsp tomato paste
  • 1/2 can dark red beans
  • 1 can pinto beans
  • 1 can chopped or crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp mild chili powder
  • 1 clove fresh garlic, crushed
  • 1 tbsp chopped fresh cilantro
  • 1 tsp nutritional yeast
  • Cayenne pepper to taste

Saute the onion in a little olive oil until soft. Add textured soy protein and spices and cook a little more while stirring until it begins to brown. Add all the other ingredients and simmer for at least 45 minutes. Better if cooked for 90 minutes. Add a little water if necessary. Sprinkle with chopped cilantro.
