Nicole Branstad Interactive Marketing Specialist, Marketing and Communications December 28, 2012Friday recipe: soy protein chili As temperatures here in Des Moines dip, I think it is time to bust out the dutch oven and cook up some hearty (and healthy) soups.I received this recipe the other week from the fabulous crew in the Wellness Center and even got to sample it while there. It is perfect for those cold winter days that lay ahead of us.Soy protein chili1 onion, chopped1-2 tbsp olive oil1/2-1 cup textured soy protein1 medium red pepper1 tbsp tomato paste1/2 can dark red beans1 can pinto beans1 can chopped or crushed tomatoes1 tsp ground cumin1 tsp mild chili powder1 clove fresh garlic, crushed1 tbsp chopped fresh cilantro1 tsp nutritional yeastCayenne pepper to tasteSaute the onion in a little olive oil until soft. Add textured soy protein and spices and cook a little more while stirring until it begins to brown. Add all the other ingredients and simmer for at least 45 minutes. Better if cooked for 90 minutes.
