Andrea Cooley July 2, 2010Friday recipe: sweet potato fries I can’t believe I haven’t posted this recipe yet. It’s super simple and one of my favorites. I love sweet potatoes, especially since they are high in vitamins A and B6. And who doesn’t love a “healthy” French fry?Sweet potato fries 1 large sweet potato, peeled and cut into wedges 2 teaspoons canola oil 1/4 teaspoon kosher salt Pinch of cayenne pepperDirections: Preheat oven to 450°F.Toss sweet potato wedges with oil, salt and pepper.Line a baking sheet with tin foil and spread the wedges out. Don’t overfill your baking sheet. I really love eating boiled sweet potato but not sweet potato fries.
