Friday recipe: Salsa!

In honor of Cinco de Mayo next week I thought I’d post a quick and easy salsa recipe. Enjoy!

Black Bean-Corn Salsa
2 15 ½-ounce cans black beans, drained and rinsed
1 15 ½-ounce can garbanzo beans, drained and rinsed
1 pint of fresh grape tomatoes, cut up
1 15 ½-ounce can corn, drained
½ red onion, diced
1 jalapeno, thinly sliced
1 bunch fresh cilantro, chopped
1 pinch of salt
Juice of 1 lime

Directions:
Combine ingredients and chill.

Looking for a way to celebrate? Head to Valley Junction, Sat, May 1 for the 6th annual Festival Cinco de Mayo celebrating the Mexican heritage of the people who established Des Moines’ railroad.

    Great recipe. Really the perfect salsa recipe for summer time and sooo good on tortilla chips. This recipe is a little different than I’ve had before and can almost pass for a salad it has so much yummy stuff in it.
