Andrea Cooley October 9, 2009Friday Recipe: Whole-wheat banana bread Who doesn’t love a warm slice of banana bread? This is a great recipe to try if you want a low-fat, whole-wheat version.Ingredients:1/3 C vegetable oil (use applesauce instead to make it even healthier)1/2 cup honey1 teaspoon vanilla extract2 eggs1 C mashed bananas (2 or 3 bananas) Tip: When my bananas start to get brown I peel them freeze them. Then all I have to do is thaw them when I want to make bread!1 3/4 cups whole wheat flour1/2 tsp salt1 tsp baking soda1/4 C hot water1/2 C chopped walnuts (optional)Directions:1. Preheat oven to 325 degrees F (165 degrees C). 2. In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into a greased 9×5 inch loaf pan. 3. Bake for 55 to 60 minutes.
