Friday recipe: healthy pumpkin cake

IMG_6392Looking for a healthy way to enjoy seasonal goodies? Add a can of pumpkin to a cake mix for a simple, low-fat dessert. The result is a super moist cake that doesn’t even need frosting. Yum!

Ingredients
1 box cake mix (chocolate, spice or vanilla)
1 can of pumpkin puree (not pie filling)
water

Directions:

Mix pumpkin puree with cake mix. Batter will be thick, add a little water if needed. Pour into greased 7×11-inch pan. Follow baking directions on box. Check it a little early.

I think the pumpkin cake is a great idea, but I think you’d be a lot better making your own cake than a packet mix, you alway use fruit sugar instead of white sugar, and look at some of the diabetic cake recipes, that way you can also do some good cake decorating on the cake to make it look pretty too, without adding too many calories! As always the cake isn’t the problem it’s everything in moderation!! lol .
