Andrea Cooley October 30, 2009Friday recipe: healthy pumpkin cake Looking for a healthy way to enjoy seasonal goodies? Add a can of pumpkin to a cake mix for a simple, low-fat dessert. The result is a super moist cake that doesn’t even need frosting. Yum!Ingredients 1 box cake mix (chocolate, spice or vanilla) 1 can of pumpkin puree (not pie filling) waterDirections: Mix pumpkin puree with cake mix. Batter will be thick, add a little water if needed. Pour into greased 7×11-inch pan. Follow baking directions on box. I came across this one in a Weight Watchers forum.Log in to Reply I think the pumpkin cake is a great idea, but I think you’d be a lot better making your own cake than a packet mix, you alway use fruit sugar instead of white sugar, and look at some of the diabetic cake recipes, that way you can also do some good cake decorating on the cake to make it look pretty too, without adding too many calories!
