We are extremely lucky here at Des Moines University to be located in such a great neighborhood. Of course we all have our favorite local spots, but one of my all-time faves is the Des Moines Art Center located just up the street from us.
This free art museum contains an impressive permanent collection as well as ever-changing traveling exhibitions. Currently, it has Jackson Pollock’s Mural on loan from the University of Iowa Museum of Art. This is definitely something you won’t want to miss!

Below is another tasty recipe from Des Moines University’s “Nutrition 101″ course, in which DMU Wellness Director Joy Schiller, M.S., CHES, and David Spreadbury, Ph.D., chair of biochemistry and nutrition, co-teach students how to stock their pantries and kitchens, how to approach various cooking techniques and – most important – how to cook a wide variety of foods for healthful, quick meal preparation. These are invaluable lessons students can incorporate both in their lives and in interactions with future patients.

As the new kid on the blog, I thought I would introduce myself. All of the below is what the PR gurus say I should put on my resume and my Linked-in profile:
I cook, I farm, I teach.
I split my time between two worlds. In one, I’m an assistant professor here in the Des Moines University health care administration program. I also teach food policy courses in our master of public health program. This year, I am serving a year-long term as president of the Iowa Food Systems Council board of directors.
