Friday recipe: black bean burger

by

I used to always have Morningstar Farms black bean burgers in the freezer for a back-up dinner. Then I discovered this recipe in an old issue of Better Homes and Gardens and realized I can make burgers that are even better. I still can’t get my husband to eat these, so I freeze the extras. I even like them without a bun. Just cover them with sour cream and avocado slices and you’re set.

Black bean burgers

1 1/2 cups salsa
1 jalapeno pepper
2 15-oz. cans black beans, rinsed and drained
1 8.5-oz. pkg. corn muffin mix
1 Tablespoon chili powder
2 Tablespoons olive oil
1/2 cup sour cream
1/2 teaspoon chili powder

Some people might think I’m crazy for getting a dog but I couldn’t help it! Ever since my dad took my first dog away from me (7 years ago) because it pooped in the house, my broken heart had never healed. All throughout medical school, I wondered when a good time would be to get a dog but as the years rolled on by, there really was never a “good time.” So the heck with it, I’m going to live my life the way I want to. Here doggie, momma’s comin’ to get you!

The DMU advantage in global health

D.O. student Jenell with the other World Health Org. interns meeting WHO Director General Chan.

Did you know 12,000+ students apply for 200 World Health Organization internships each year? And DMU students have had 6 spots over the last two years. This high placement rate, I believe, is not a coincidence but more a credit to the hard work of our global health faculty & staff.

The sites & partnerships around the world set up by DMU make it easy for our students to experience new cultures and health care systems before graduation. And in fact I think we’re attracting students to Des Moines University in part because of our great global health programs.
