Take time to remember

Today DMU is closed in honor of Memorial Day. While everyone loves a long weekend to spend with family & friends, make sure you don’t forget why we all have the day off! Memorial Day is a time to remember our American military members who died in service.

According to my good friend Wikipedia, the first observation of Memorial Day was in 1866.Honoring our long history of U.S. men and women who have given their lives for our freedom is important. Just like Independence Day, I love reminders like today that inspire patriotism and pride in our country.

Kiplinger picked Des Moines for their “10 best cities for the next decade” list which is pretty awesome. So rest assured, the next 10 years in Des Moines are guaranteed to rock.

Today is the big day! Congrats to all of you who will lay claim to a new degree today!

Amongst the nine programs, DMU bestowed 466 degrees (some of you got more than one, you crazy cats!) and you will all take that next step into the world.

Congrats on this huge mile marker! You have earned much praise & celebration today. Go out & make us proud!

Friday recipe: moroccan chicken kabobs

If you haven’t broken out the grill yet this spring, this is the weekend to do it! These kabobs look super easy and you can customize them by adding any of your favorite veggies. Any time you can grill your meat and veggies together I’m all for it.

What will you be grilling this holiday weekend?

Grilled Moroccan chicken kabobs

Ingredients

1 1/4 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 Tbsp orange juice
1/2 tsp ground coriander
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp freshly ground black pepper
Cooking spray
1 large zucchini, cut into 1-inch-thick half-moons
2 small red onions, quartered through the root
4 long skewers for assembling the kebabs
