Friday recipe: Salsa!

In honor of Cinco de Mayo next week I thought I’d post a quick and easy salsa recipe. Enjoy!

Black Bean-Corn Salsa
2 15 ½-ounce cans black beans, drained and rinsed
1 15 ½-ounce can garbanzo beans, drained and rinsed
1 pint of fresh grape tomatoes, cut up
1 15 ½-ounce can corn, drained
½ red onion, diced
1 jalapeno, thinly sliced
1 bunch fresh cilantro, chopped
1 pinch of salt
Juice of 1 lime

Is anyone even checking my blog anymore? Probably not. Sorry I have not been writing lately… life has kind of been consuming. Believe it or not school actually hasn’t been the consuming part but just life.

Crockpot resurrected!

Here’s a super easy recipe for a melt-in-your-mouth pulled pork sandwich.
Ingredients:
1.   One can of beef broth
2.   1-2 pounds of pork ribs
3.   A bottle of your favorite BBQ sauce
4.   Your favorite bread to eat it with

Directions:
Place beef broth and pork ribs in crockpot and cook on high for 4 hours. When done, meat should fall off the bone and into your mouth! Mix in your BBQ sauce and slather on a bun and call it good.

Hope you give it a try, it’s so easy people are going to think you slaved all day in the kitchen making it!

Nitefall on the river lineup!

What’s better than live tunes outdoors in a beautiful spot? Not much! That’s why I think Nitefall On The River is so cool! The schedule for this year was just announced.

The fun begins May 27 (my birthday) with the Bodeans, then continues each Thursday through July 29. After the first show it’s Tonic, Ryan Star, Alex Band, JJ Grey, Sister Hazel, Ingrid Michaelson, Vertical Horizon, the Old 97s and Barenaked Ladies!

All tickets are under $20. I recently saw Ingrid at People’s on Court & loved her show. I’ll see her a third time at Nitefall, for sure! And I’m really excited to see BNL live! What fun!

I scream for ice cream!

Friday recipe: hummus

Hummus is my favorite dip to go with fresh veggies or to spread on sandwiches in place of mayo. There are lots of flavors (roasted-red pepper, garlic, cracked pepper) at the grocery store, but it’s actually really easy to make! All you need is a food processor or blender to mix the ingredients. Check out this recipe from DMU’s very own Marco Torres, kitchen lead in Summerfield’s Cafe on campus!

Marco’s hummus (halved for a family-size portion)

4 cups garbanzo beans, drained
4 oz. tahini (ground sesame seeds, typically sold in jars in Asian food sections or stores)
1 tsp. lemon juice
3.5 oz. chipotle peppers
1 sprinkle of salt
1 sprinkle of pepper
