Oprah loves Iowa!

O, the Oprah Magazine recently listed 100 things getting better. Iowa made the list. The only state with such an honor! It’s a random mix of polarizing reasons for why Oprah thinks Iowa is even better than before but hey, we’ll take it…  Here’s the entry (links put in by me):

32. Iowa— Legalizing gay marriage in 2009 + producing artisanal charcuterie (try La Quercia’s organic prosciutto) + University of Iowa football landing among the top 25 college teams for the fifth time this decade + ranking second on MainStreet.com ‘s Happiness Index = one seriously happening Hawkeye State.

Friday recipe: kidney bean and tuna salad

I’m a big fan of tuna salad. It’s super easy, inexpensive and healthy! Don’t let the kidney beans in the title of this recipe scare you. They are a harmless red bean that add bulk (and protein) to this super simple sandwich.

Kidney bean and tuna salad

Ingredients:

1 15 ½ oz. can kidney beans, drained
½ cup green pepper, chopped
1 6 ½ oz. can water packed tuna, drained and rinsed
1 tablespoon low-fat mayonnaise
3 tablespoon non-fat yogurt
½ cup chopped celery
3 tablespoon pickle relish

Mix together all ingredients and chill.

This is totally out of our daily-norm! What fun! You can even get group ticket discounts at a great deal. If you go, be sure to tell us about it!

Easy garlic smashed potatoes

Freshly roasted garlic is, by far, my most favorite form of garlic. You can substitute fresh garlic for garlic powder if that’s what you have. This recipe serves as a wonderful side dish to pair with your protein like steak, chicken or honey- baked ham.

In a piece of aluminum foil:
-put in 8 garlic cloves, peeled
-cover with olive oil
-add a dash of salt
-close up the foil and bake in a small oven at 350F for 40 minutes.

The faculty models

So as many of you know there was a fashion show last Thursday at DMU. I am obviously way late in posting about it but I figured better late than never.

Well, there were three lovely PA students representing our class and looking fly as ever. Garet Ford and Erinn White were a part of the formal wear and Annie McNeil was sporting SPAL wear. And dang, they could work that catwalk. The whole thing was a ton of fun and we had a great turnout from our PA class of 2011 which always makes for a good time.

Learn about medical apartheid tomorrow @ noon

The DMU diversity office has arranged for Harriet A. Washington, author of “Medical Apartheid: The Dark History of Medical Experimentation on Black Americans from Colonial Times to the Present” to speak on campus tomorrow (1/27) @ noon. Free and open to all, her talk will be held in the DMU Olsen Medical Education Center, 3200 Grand Avenue in Des Moines.

The event is in celebration and recognition of black history month and Martin Luther King, Jr. Day this month.
