Friday recipe: easy muffins

The DMU marketing department’s office is on the fourth-floor of the Academic Center. So when our fellow fourth-floor friends started passing around, modifying and baking a simple, delish recipe for muffins, we figured it was only right to share the goodness. I believe it began in the registrar’s office, moved to financial aid and was passed along to accounting staff before it got to me. Well-tested, so here you go:

Fourth-floor’s easy muffins

1 cup flour
1/4 cup sugar
3 tsp baking powder
1/2 tsp salt
1 cup quick oats
1 egg
1 cup skim milk
3 Tbsp applesauce

Optional add-ins:
flax seed
berries
fiber powder
cinnamon
brown sugar
poppy seeds

Sift the dry together — flour, sugar, baking powder, salt — then add oats.  Add the slightly beaten egg, milk and applesauce, and then stir until everything is moistened.  You may need to let batter sit and thicken (the oats soak up the liquids).

Fill a sprayed or papered muffin pan about 2/3. Bake for 15 minutes at 425 degrees (less time for mini muffins).

Makes 12 muffins or 24 mini muffins.
