Friday recipe: baked potato soup

This is one of my go-to crock pot recipes. I usually have all the ingredients on hand and it only take 10 minutes to throw together in the morning. The best part is coming home after work with dinner ready! I found this recipe on one of my favorite food blogs, Iowa Girl Eats. You should definitely check out her recipes. They’re always delish!

Baked potato soup

5 medium-large sized red potatoes, chopped in pieces
5 cups chicken broth
1/2 large onion, chopped
salt & pepper
garlic powder
1/4 cup evaporated milk
1/2 cup shredded cheese
2 tablespoons butter
1 cup corn kernels
6 strips bacon, cooked & chopped

Directions:

1. Combine potatoes, chicken broth, onion and seasonings in crock pot. Cook on low for 9 hours.

2. Mash potatoes in crock pot and add milk, cheese, butter, corn and bacon. Season to taste with more salt & pepper.
