Friday recipe: sweet potato fries

I can’t believe I haven’t posted this recipe yet. It’s super simple and one of my favorites. I love sweet potatoes, especially since they are high in vitamins A and B6. And who doesn’t love a “healthy” French fry?

Sweet potato fries
1 large sweet potato, peeled and cut into wedges
2 teaspoons canola oil
1/4 teaspoon kosher salt
Pinch of cayenne pepper

Directions: Preheat oven to 450°F.

Toss sweet potato wedges with oil, salt and pepper.

Line a baking sheet with tin foil and spread the wedges out. Don’t overfill your baking sheet. If the wedges are too close together they will get mushy.

Bake until browned and tender, turning once, about 40 minutes total.
