Friday recipe: Salsa!

In honor of Cinco de Mayo next week I thought I’d post a quick and easy salsa recipe. Enjoy!

Black Bean-Corn Salsa
2 15 ½-ounce cans black beans, drained and rinsed
1 15 ½-ounce can garbanzo beans, drained and rinsed
1 pint of fresh grape tomatoes, cut up
1 15 ½-ounce can corn, drained
½ red onion, diced
1 jalapeno, thinly sliced
1 bunch fresh cilantro, chopped
1 pinch of salt
Juice of 1 lime

Combine ingredients and chill.

    Great recipe. Really the perfect salsa recipe for summer time and sooo good on tortilla chips. This recipe is a little different than I’ve had before and can almost pass for a salad it has so much yummy stuff in it.
